Last night a friend brought us the winner of meals! It was a winner because the kids each had two servings! They haven't really eaten much of anything else people have brought, unfortunately. Anyway, my friend brought over tacos, toppings and a big fruit salad. She made the tacos with ground turkey, taco seasoning (I think she used a packet but I use this recipe) and she mixed in refried beans, but you can warm up black beans and squish them to make it a little healthier. For toppings she brought shredded cheese, diced avocado, halved cherry tomatoes, and shredded romaine. She also brought over warm crunchy shells, but it would taste good in whole wheat soft tortillas as well. The fruit salad was really good too... bananas, watermelon, strawberries, blueberries and apples. Very tasty and healthy meal.
P.S. This is a signature meal at our house... When I make the meat and bean mixture I usually add diced onions and red bell pepper to it and cook until they are softened. It adds a good flavor and texture and gives you just a bit more veggies.
