My meals for the week

As you know, I am not currently cooking anything but I thought that since the point of the blog was for meal ideas I could tell you about what people are bringing me. So far we have received a potato casserole, similar to the recipe linked. It seems to be frozen hash browns, cheddar cheese, diced ham and sour cream. I thought it was really good, myself... definitely not a healthy meal though. Next we got a meal that we can put in the crock pot. We haven't made it yet, it's in the freezer but it looks really good! Here's the recipe:

Chicken Fiesta with Black Beans
3-4 boneless chicken breasts
15 oz can corn, drained
15 oz can black beans, drained and rinsed
1 Tbsp. cumin
1 tsp. chili powder
1 onion, sliced
1 green pepper, sliced
14 oz can diced tomatoes
6 oz can tomato paste


  1. Combine all ingredients in the slow cooker and mix well.
  2. Cover and cook on high for 5-6 hours or low for 7-8 hours.
  3. Garnish with cheese and serve over cornbread or in tortillas. (She made us cornbread, which is also in the freezer.
Next we got herbed baked chicken with buttered boiled potatoes, buttered green beans and biscuits. Tonight we are expecting a sausage lasagna.

I will let you know what else we get as the week goes by. It's fun to have people bring meals, you get a lot of good ideas and get to try things you may not have had before.
